Im trying to purchase silk and para cord wrap for my trainers' handles.

Can anyone make recommendations for what type and size (1/8, 3/8, etc) for each? I would appreciate links to trusty online sites. Thanks in advance.

Standard Paracord aka 550 cord is good but so is the cheap "paracord" that lacks the 7 inner strings. I'd order from whoever was cheap and has the color you want.
http://www.ubraidit.com is supposed to be good.
I sometimes take the inner fill out of the cord to make it lay flatter.
You may also look at climbing cord in the 2mm size, it does a pretty good wrap.
Take a look here for traditional Japanese wrap designs.

Personally I'm trying to get away from it as I have no real knives that have wrapped handles. I mostly use wood now.

As far as silk I have no idea. Chances are the Tsukamaki page should give some help as ito is sometimes made of silk.

however is 550 paracord good enough to handle majorly sweaty palms?

The paracord should be fine. I don't think the sweat will effect the wrap.
Worse that may happen is the wraps get soaked.
Just be sure to get the warps tight and even, paracord will shrink when it gets wet. If the wrap uneven it may shrink funny and you'll have to redo the handle.
